Not shown is the starter: a phyllo cup with Humbolt Fog cream, grilled quince, 25 year old balsamic, fireweed honey, dusted with a pepper shree. Paired with our 2009 Pinot Gris.
Cherry wood smoked breast of pheasant with huckleberry BBQ sauce, pancetta,fennel and beet cole slaw, with carmelized pumpkin. Paired with our 2005 Intrigue.
Braised lamb shank tamale, seared loin of lamb, black currant mole sauce with olive jus sphere. Paired with our 2004 Merlot.
Chai tea infused panna cotta with candied cardamom spiced almonds; spiced-chocolate baklava with a tamarind-honey syrup; milk chocolate truffle with a red bush chai tea ganache. Paired with our 2007 Carmenere.
Soy-garlic marinated Ahi tuna served rare with a ginger-soy syrup, mushroom essence; served with arugula and citrus salad. Paired with our 2008 Adagio.
